docs(02-04): verify progressbar document count fix 

- MofNCompleteColumn already properly configured in all progressbars:
  - _checkout_and_convert_items: shows X/Y during checkout/conversion
  - _embed_members: shows X/Y during embedding
  - workspace_process: shows X/Y during document processing
- All progressbars include SpinnerColumn, TextColumn, BarColumn, MofNCompleteColumn, TimeElapsedColumn
- Document counts display as 'X/Y' format as required
