Resolve "Coverage analysis done using "forced" encoder and decoder modes"

Related to #335 (closed)

Removes forcing mode options from self_test.prm and self_test_evs.prm. The next step would be to remove the -fec options, to allow to run the test suite without DEBUGGING enabled.
